The persimmon (柿子, Shizi) is the edible fruit of a number of species of trees in the genus Diospyros.

The most widely cultivated of these is the Oriental persimmon, or Chinese permisson.

In 2019, China produced 75% of the world total of persimmons.

Autumn and winter are persimmon drying seasons in China. Follow these tips for making dried persimmons!

1. Pick and wash the fruit.

2. Trim tops and peel.

3. Attach kitchen twine to stems and hang fruit to dry.

4. Start massaging.

5. Cure and package.

Keep at room temperature for a few months or chill or freeze up to a year.
