Some so-called experts who have little knowledge of roast duck use the standard of the hung oven roast duck to evaluate closed oven duck and conclude that duck's skin is not crispy enough. Fortunately, the time-honored Bianyifang has applied for the "national intangible cultural heritage protection" with the skill of roasting duck in a closed oven, and now it is not afraid to be said that the closed oven roast duck in Bianyifang that was founded in the Yongle period of Ming Dynasty is not authentic.
Peking duck is sold everywhere in Beijing from the time-honored Chinese brand "Quanjude" and "Bianyifang", to the major supermarkets on the streets and alleys. If you want to buy the most authentic one, of course, you have to go to a time-honored store, but be prepared to queue up. Those who are in a hurry can also buy it in supermarkets or shops in train stations, terminals and other places. If you buy it at a store, it is recommended to choose famous brands.
