As the saying goes, "Suzhou and Hangzhou are places on the earth comparable to paradise". Xianheng Hotel

Zhejiang cuisine is in four branches, namely, Hangzhou, Ningbo, Shaoxing and Wenzhou foods.

Xianheng Hotel is a time-honored restaurant for Zhejiang cuisine, headquartered in Shaoxing, the hometown of Lu Xun (a famous Chinese scholar in the Republican period of China). In the beginning, it was a small tavern ran by Zhou Zhongxiang (Lu Xun's father's younger male cousin) in Fangkou, Duchang of Shaoxing. Later on, Xianheng Hotel became famous at home and abroad as Luxun mentioned in his works such as Kong Yiji, Disturbance and Tomorrow.

The Drunken Shrimp made of fresh shrimp preserved in wine with various seasonings boasts unique fresh aroma. Qiandao Lake Fish Head is also the real thing featuring fresh and juicy meat in thick but light-flavored soup with abundant ingredients.

Celestial Restaurant Fresh Realm boasts thumb-up home cooking at affordable prices usually 200-300 Yuan sufficient for a hearty meal for a family. Endless options include the tasty and refreshing Shredded Zucchini, a cold dish sauced with mustard and baked sesame paste, slightly sweet crispy smoked fish, razor clam on needle mushroom, a cold sweet dish with the razor clam well cleaned, and a hot dish named River Shrimp Fried with Scallions boasting sweet and crispy shrimp.

The braised Dongpo pork could top your list for its sauce going well with rice. Grayling braised in brown sauce with vermicelli in thick soup features rich flavor. The staple food is wonton with shepherd stuffing wrapped in thin skin boasting clear rice grains and well chopped vegetable. The sweet green rice ball, as a seasonal dessert, stuffed with sweet black sesame wrapped in skin made of sticky rice mixed with wheat grass juice, is nutritious and perfect for children. Shao Shi San

The name "Shaoshisan" originates from the slang of Shaoxing. "Shisan" is a vocabulary in Wu dialect that refers (in a slight tone of laughing and blaming) to people who are slow in reaction. The folk slang in its daily use means being straightforward, simple and honest but in cute characteristics. With a firm belief in integrity, “Shaoshisan” never sell seconds at the best quality prices, while inheriting and carrying forward its cooking skills of original taste and flavor of Zhejiang cuisine. That’s why Shaoshisan is capable of offering time-honored classic foods.

Smelly mandarin fish, in spite of its unique smell undesired for some people, tastes tender and soft in its perfect fish aroma. The restaurant offers special kind of this fish with less fishy smell but exquisite fragrance that makes you fall in love with it even in first taste. The fish soup, as the essence of this dish, is added with noodle for you to enjoy its perfect soup flavor. This is a same way to eat Chaiguo Fish (fished braised in a special big wok) in Northern China.

This Restaurant serves Zhejiang cuisine by a distinguished chef team from Hangzhou. The broad front courtyard embraces a white building beside a statue of Xuxian and a clear pool full of red carps, revealing the gentle and mild style of Southern China. The dining hall features spaces with one smoothly flowing to another and embellished with bright lanterns creating a brilliant court style in its grandeur vibe.

The West Lake Fish in Vinegar Gravy as a typical Hangzhou dish is a must-try, boasting tender fish meat in proper controlled sweetness and acidity. For best taste, you can have it while it's hot.

Another dish recommended is Fairy Chicken, for which a reservation is required. The chicken is braised with pig trotters to highlight its fresh flavor and absorb excess fat in the chicken stock.

This restaurant offers traditional courses in authentic flavor of Zhejiang cuisine, especially Hangzhou dishes that are amazing. Each of its branches in unique decoration brings you pleasant dining experience.

The braised pork in brown sauce here is made of selected quality streaky pork, fresh black carp and dried bamboo shoots stewed in pot above medium-low fire, featuring bright color, appetizing aroma, tender and fresh taste (because excess oil is absorbed by the dried bamboo shoots) free of any sweetness that is always found in a traditional one, and the rich aftertastes.

More options include the old duck pot, in authentic Hangzhou flavor, made of old duck (at least 2 years old) braised with ingredients like dried bamboo shoots (from Lin’an), Jinhua ham, flowering cabbage and reed leaves. The duck meat is chewy but not tough, fresh but not greasy; bamboo shoots are fresh and tasty, and chewy ham in proper fat-to-lean ratio, all completed by a bowl of duck soup.

This restaurant featuring simple and chic decoration is well designed with differently themed areas that bring you endless surprises, and all dishes here are perfect and worth trying.
