Tofu Hotpot

In this traditional dish for people livingin Mentougou, marinated pig's head, knuckle and walnut kernels are compressed under the weight of several hundred jin (=0.5kg) for about twelve hours to remove most of the fat. Since walnut is a tonic for brain, this refreshing and palatable dish is usually made for school boys and girls. It is available in the restaurant Baihua Renjia in Qingshui Town.
