1. Nan Lai Shun Restaurant

The Xiangda Nan Lai Shun Restaurant, firstly established in 1973, became famous for its specialties including sautéed lamb slices, roast lamb, instant-boiled lamb, and quick-fried tripe. Some topmost renowned snack chef, such as Sheep Head Ma, Glutinous rice cake Mi, and Jiaoquan Wang, joined Nan Lai Shun since 1961, making Nan Lai Shun a most distinctive restaurant with the great reputation as “the best snack bar” in Beijing. 2. Bian Yi Fang

Bian Yi Fang, established in the 14th year of Yongle Period in the Ming Dynasty (1416), is the most famous Chinese time-honored restaurant in Beijing with history of almost 600 years. For native in Beijing, roast duck made with closed oven is considered to be typical Beijing dish, while Bianyifang is expert in cooking closed oven roast duck. Different from traditional hung oven roast duck, the duck was put into a preheated closed oven built of bricks and fitted with metal griddle, and is placed in the oven immediately after the fire burns out. Heated by the convection of heat within the oven, the roasted duck turns shiny brown, and the skin and meat taste crisp and tender. Except for hung oven and closed oven roast duck, Bianyifang has developed a brand-new roast duck-“roast duck with flower fragrance”, which applies special cooking method to maintain nutritional elements of lotus seeds and red jujube and brings new taste and shape of roast duck.

3. Tong He Ju

Tong He Ju, established in the 2nd year of Daoguang period in the Qing Dynasty (1822), is the earliest Chinese time-honored brand specializing in Shandong cuisine. 8. In Casserole (Sha Guo Ju)

The In Casserole, established in Qianlong Period of Qing Dynasty (1741BC), is a famous restaurant featuring traditional Chinese casseroles. White meat casserole is the signature dish with long history. It is said that the Manchus brought civilization and traditions with distinguished characteristics in Central China since the Qing Dynasty founded.
