Huaiyang, a place appears in many classic Chinese poems, generally means the region of the lower reaches of the Huai and Yangtze rivers. Besides poems, Huaiyang is also famous for its food, Huaiyang cuisine, one of the China’s four major cuisine, along with Shandong cuisine, Sichuan cuisine and Cantonese cuisine. Started from the Spring and Autumn, flourished in Sui, Tang, Ming and Qing Dynasties, it is always known as “the first good taste in the Southeast China, the ultimate beauty of the world ".

Beijing Gehua New Century Hotel is hosting the Huaiyang Food Festival from May 5 to June 30 at its Jiangnan Chinese restaurant and Huating box. Chefs mastered at Huaiyang cuisine will offer a spectacular fresh feast for customers. Traditional Huaiyang dishes such as Dazhugansi, Squirrel-shaped Mandarin fish, Kung Pao Shrimp, Lion’s Head (Stewed Pork Ball) will be served up. There will also be other new dishes with the flavor of Huaiyang cuisine, such as Zaoxiangsanxian, Cooked Liquor-saturated Shrimp, Wild Vegetable and Rice Crust, and Special Sugar Small Tomatoes. With the flavor of sweet and salt, using fresh materials, these dishes tend to stress the original taste of the ingredients. In addition, the fresh and natural style of wobble-plate is another highlight of the feast.

Take a sip of the light Maanqiao duck soup, eat the fresh and delicious lion's head, or try the crisp and tender Huai'an Pucai, these dishes are not only healthy, but also offer you a splendid journey to the nature.
