As one of Japan’s traditional pasta, soba integrates three characteristics of Japanese food: delicate, mild, and fresh. One can’t fully appreciate the delicacy unless he possesses inner peace.

You can eat soba cold or hot, the way to consume them is the same: dipping. You mix a small portion of the sauce with the noodles before dipping them in the cold soup, and then suck the wisps into your mouth. The soba is served on a bamboo sieve covered with ice shatter, thus the soba remains cold and fresh all along. At the side of the sieve lie plates of various ingredients: mustard, ginger, quail eggs, sesame, and green onion. You mix the ingredients in the soup, and then you can indulge in the aroma.They serve full loads of tempura, vegtetables, and seafood, perfect matching the golden noodles. They won’t taste greasy, nor will they distribe each other’s flavor. As the noodles slip into your stomach, summer heat is graually relived.
