BaYe Roasted Duck is an innovation of chairman Hua Lei and was developed over time by Hua’s Restaurant's chefs. The duck tastes completely different from traditional roasted duck. BaYe Roasted Duck creates its unique taste by changing the ingredients through pickled ingredients. One can find a mixed taste of mustard, spiciness, and fruitiness. Mr. Hua Lei ranks eighth-oldest in his family, and is hence called BaYe in Beijing, which literally means Master Eight. Therefore, the dish is called BaYe Roasted Duck as it’s innovated by BaYe.
