Donglaishun Restaurant is a long-standing Muslim restaurant famous for its instant-boiled mutton. After over one hundred years of elaboration, this previously locally renowned restaurant is now famous both at home and abroad.

Donglaishun Restaurant was founded by Ding Deshan, a man of Hui Minority. In the 29th year of the Guangxu reign period (the year 1903) in the Qing Dynasty, Ding Deshan set up a snack stall on Wangfujing Avenue in Beijing. Due to its prosperous business, he expanded the stall into a shop named “Donglaishun Porridge Booth”. In 1914, such additional food as quick-fried, toasted and instant-boiled mutton as well as fried dishes were offered at the “Donglaishun Porridge Booth”. It was then renamed Donglaishun Mutton Restaurant. By the 1930’s -1940’s, the restaurant had been famous across Beijing and became one of the "China Time-honored Brands”.

Under the painstaking efforts of several generations of chefs, Donglaishun Restaurant is characterized by the fine ingredients selection, delicate processing, complete condiments and strong fire, etc. Mutton used in the restaurant is taken from small-tail sheep produced in the Xilin Gol League sheep producing area in Inner Mongolia Autonomous Region. More importantly, only several parts of the sheep such as rear leg, rear body and spinal flesh are chosen. At the same time, exquisite skills of cutting mutton are required in the restaurant, with such standards as thinness, evenness, uniformity and handsomeness. When served on trays, mutton slices should be translucent to such an extent that patterns of the trays can be seen through them. For this reason, mutton offered by the restaurant is instant-boiled and known for fragrance, tenderness, lack of odor. Moreover, diversified condiments with peculiar texture are specially prepared by the restaurant, and all hotpots used here have been modified to obtain strong charcoal fire without flying ashes. Other than instant-boiled mutton, Donglaishun Restaurant offers a variety of Muslim fried dishes including quick-fried mutton, minced chicken meat and tremella, roasted gigot and roasted duck. Additionally, it provides a variety of flavored snacks such as butter fried cake and sweet walnut soup.

At present, chain shops of Donglaishun Restaurant have been distributed throughout China in which various services such as dinner, short order, snack and takeout are available. It has attracted a lot of celebrities from home and abroad.
